The Power of Produce

There have been numerous studies on the effects of produce with long-term health benefits. I wonder what the Indians were doing way before the “white eye” came into their land. Did they know what herbs, plants, vegetables and fruits can do to straighten their health? Of course they did, modern society just took those things and concentrated them into pill forms. But, you’d probably need a supplement the size of a golf ball to capture all the benefits. Scientists believe fresh fruit and vegetables that have vitamins, minerals and fiber will work synergistically to promote health and reduce diseases, as well as some form of cancers. Eating lots of fruits and vegetables also boost the immune system. Which means you’re most likely to stay healthier with fewer colds and minor infections.

Fresh produce provides fiber that cannot be absorbed by the body, has no calories, and yet offers many health benefits. Fiber can reduce blood cholesterol levels and help stabilize blood sugar. That’s why I personally don’t believe in taking high blood pressure pills that I hear people are on because their doctor says “here take these, but you might have some side effects”. Did the Indians have those pills for their high blood pressure or did they just eat Fruits and Vegetables that reduced any health problems and had no high blood pressure? Eating things like chives, leeks, garlic, onions and shallots can protect against cancer and reduce the risk of heart disease. For skin, bone health, the immune system and vision, eat yellow, orange and dark leafy vegetables. For strong antioxidants properties in your body, have yellow, orange fruits, dark leafy produce like pumpkin, sweet potatoes, carrots, kale and spinach. There are so many different type of cancers and many different types of foods to eat that will reduce the risk, like eating red fruit and vegetables such as tomatoes, cooked tomato products, watermelon and red peppers that especially reduce the effect of prostate cancer. Vegetables and fruits are not only rich in essential vitamins, minerals and fiber; they’re also rich in compounds that provide benefits beyond basic nutrition that our body needs everyday. So lets take care of our bodies that we were born with and enjoy a healthy, fun, and happy life. Remember I also put on “Private Dinner Parties” I bring the restaurant to you.  Indonesian Chicken and Vegetable Kabobs

½ c           fresh lemon juice

1 T           olive oil

2 ea          garlic cloves – minced

2 T           chopped fresh mint

3 ea          large Portobello mushrooms – sliced

1 ea          red bell pepper – sliced

½ ea         red onion – cut into 1” pieces

½ lb          chicken breasts – skinless – cut into 1” pieces

salt & pepper to taste

wooden skewers

Combine lemon juice, olive oil, garlic, mint, salt & pepper in a bowl, stirring with a whisk

Place chicken, mushrooms, bell peppers & red onions in the bowl with the lemon mixture and mix well

Let set 30 minutes

Assemble on skewers, alternating the pieces

Place on grill and cook 5 to 7 minutes or until chicken is done
