Getting the Garden Ready!






After dinner and enjoying one of Bill Mitchell's famous desserts!

 

One of the best things in life is the variety of foods there are in the world, being vegetable, meats or fruits. There’s one thing that everyone has in common, we all have to have life sustaining substance to keep us alive, otherwise know as food. And it’s just not animals that need it. Plants, microorganisms, and seeds need the fuel to continue the cycle of life. That’s what God had in plan for everything that is living. He also gave us the necessary tools to keep us breathing with a bounty of choices. We all know by now that we need certain vitamins, proteins and fats in our body to maintain somewhat of a healthy life. We make “choices” in life of how we take care of our being that God gave us.

 Nature is a tool that was given to us to take care of, nurture, to use and not to destroy for future generations. So we learned, as humans, that when we use nature we also need to give something back. We started to raise farms and orchards with hundreds of choices to continue the cycle of life. Apples are one of nature’s great nutritional gifts even the wrapping is edible. They’re low in calories, are fat-sodium and cholesterol-free. Apples are an excellent source of fiber and contains many of the phytochemicals that play an important role in preventing disease. You say, “what the heck is phytochemicals’? Remember that I said God gave us tools to maintain a healthy life? Phytochemicals are non-nutritive, meaning they have no nutritional value to them, just that they have a protective disease preventive property in them. Antioxidant, to protect our cells against certain types of cancers. Research indicates that apples may reduce LDL bad cholesterol, lower the risk of stroke, improve lung function and are a good source of mineral boron, which promotes good bone health.

 The fruit’s fiber make you feel full and slows down the rate at which the fruit’s natural sugar is released into the blood stream, which helps to keep your blood sugar levels steady. There are many different varieties of apples, most with vitamin A and C. I guess the old saying “ An Apple a day keeps the Doctor away” is True,,,,,,,,,

Stuffed Turkey Breast with pine nuts, raisins and apples

3 lbs                       boneless Turkey breasts

¼ c                         pine nuts

¼ c                         raisins

¾ c                         diced apples (your choice) peeled

salt and pepper to taste

1 c                          diced onions

½ c                         diced carrots

½ c                         diced celery

 

Pre heat oven to 350’

Slice middle of the Turkey ¾ of the way through, end to end.

Combine nuts, raisins and apples in a bowl. Open Turkey and fill with mixture, salt and pepper Turkey

Place onions, carrots and celery in a roasting pan with just a little water and place Turkey on top on vegetables.

Cover pan with foil and bake 1 hour, than remove foil and continue to bake for another 15 minutes or internal temperature is 165’

Remove and let stand for 10 minutes.

To serve, cut Turkey into ½” thick slices, plate and surround with the roasted vegetables!!!
